Sour Pickles

Ingredients for 1 jar of pickles:
8g kosher salt
1 cup water
enough pickles to fill 1 qt jar
5 whole peppercorns
2-3 sprigs fresh dill
Half head of garlic peeled
Optional spice add-ins: dill seed, coriander, caraway, dried or fresh chilis
Step 1: Dissolve salt in the water
Step 2: Add cucumber, garlic, peppercorns and fresh dill to the jar
Step 3: Add any other optional spices or flavorings
Step 4: Add salt water until all the cucumbers are submerged
Step 5: Put a lid on the jar and label with the date
Step 6: and leave it on the counter for 24 hours
Step 7: Refrigerate for another 7-10 days depending on how sour you like your pickles.
Enjoy for up to 1 month after making.
My favorite spice combos include:
garlic, (2) chili peppers and some lemon peel
garlic, whole coriander, whole caraway and whole mustard seed
garlic, onion, whole mustard seed, whole coriander
NOTES: NEVER use iodized salt when pickling. This is why I recommend kosher salt.
Feel free to cut the cucumbers into any shape or size you like.
